Resumen

Manchego cheese has a long history that has been fundamental in obtaining its Denomination of Origin. Its Regulatory Council was established according to European regulation in 1985, and has been an essential piece for the increase of international production and trade of one of the most prestigious and recognized Spanish food products. The present work takes a tour of the most important stages of his past, particularly in the nineteenth and twentieth centuries.
