Resumen

The aim of this work was to study the effects of somatic cell counts/ml milk[RCS; low (RCS<1.000.000) and high (RCS>1.600.000)] and time of year(January, March, May, July and October) on sheep's milk and cheesemicrobiological characteristics. Pressed raw cheeses were made from eachtype of milk in an industrial plant in each time of the year and samples of milk,whey and cheese (60 days ripening) were taken. As for milk samples,psychrotrophic counts were lower in October and March when compared tothe other times of the year, whereas mould and yeast counts tended to behigher in the first half of the year. No significant effects were observed incheese microbiological characteristics. Moreover, a sharp variabilitybetween manufactures was observed (both in milk and cheesecharacteristics), which could have influenced on the lack of effectsattributable to RCS.
